Thrifty Rice Cooker Mackerel
Quick and dirty rice cooker mackerel rice for one, but can be easily scaled for 2 or more - just double or triple the ingredients. As long as you use equal parts rice and water by volume, the rice cooker will do the rest.
Feel free to substitute the mackerel for sardines or pilchards - just make sure that you include the sauce in the rice cooker as well. Fish in spring water may feel fancy, but you’re setting yourself up for a pretty sad time.

Ingredients
- 1/2 cup basmati rice
- 1/2 cup water (basically 1:1 rice to water ratio)
- 1 tin of mackerel in sauce (teriyaki works well)
- a good splash of soy sauce
- a shake of furikake
- 1 chopped spring onion
Method
- Put the rice, mackerel (including sauce), soy sauce and water into the rice cooker. Mash it up a bit so that the mackerel is broken up and mixed through the rice.
- Switch on the rice cooker and set it to ‘long grain’.
- When the rice is cooked, spoon it into a bowl and top with the chopped spring onion and furikake.
- Eat with a spoon, straight from the bowl.
- Contemplate.
