Method

  1. Put a pan of salted water on to boil and boil the pasta until just done.
  2. Heat 4 tbsp of oilve oil in a large pan and gently cook the onions until soft, but not browned.
  3. Add the garlic and chili flakesm, and cook for a minute.
  4. Add the peas and continue to cook gently.
  5. Add the pasta along with some cooking water and simmer gently.
  6. Gently stir in the pecorino and mint.
  7. Serve with a drizzle of good olive oil.
