Pasta e Piselli
Pasta with peas, garlic and mint.

Ingredients
- 1 onion, diced
- 1 clove of garlic, diced
- Pinch of dried chili flakes
- 100g pasta
- Handful of frozen peas
- 1 bunch of mint leaves, roughly chopped
- Olive oil
- Pecorino
Method
- Put a pan of salted water on to boil and boil the pasta until just done.
- Heat 4 tbsp of oilve oil in a large pan and gently cook the onions until soft, but not browned.
- Add the garlic and chili flakesm, and cook for a minute.
- Add the peas and continue to cook gently.
- Add the pasta along with some cooking water and simmer gently.
- Gently stir in the pecorino and mint.
- Serve with a drizzle of good olive oil.
