Mackerel Pasta
A cheap and easy week night meal. You can replace the pasta with a tin of butter beans for a low-carb options.

Ingredients
- 200g pasta
- 1 tin of mackerel, drained
- 2-3 cloves of garlic, thinly sliced
- 1-2 teaspoons of capers, roughly chopped
- a pinch of dried chilli flakes
- a good handful of cherry tomatoes, halved
- a good splash of olive oil
- some lemon juice
- a handful of fresh rocket
Method
- Put the pasta on to boil.
- Heat the olive oil in a pan with the garlic, capers and chili flakes. If your mackerel came packed in oil, feel free to use this.
- When the garlic starts to soften - but before it goes brown - add the cherry tomatoes and cook for a few minutes until they start to break down.
- Add the drained mackerel and break it up a bit with a spoon. Cook for a couple of minutes until heated through.
- Add the pasta and a good splash of the cooking water.
- Toss everything together and cook for a minute or two until the pasta is coated in the sauce. Add more cooking water if it looks dry.
- Add the rocket and cook gently until it starts to wilt.
- Finish with a good squeeze of lemon juice and some black pepper.
