Mackerel Pasta


A cheap and easy week night meal. You can replace the pasta with a tin of butter beans for a low-carb options.

Method

  1. Put the pasta on to boil.
  2. Heat the olive oil in a pan with the garlic, capers and chili flakes. If your mackerel came packed in oil, feel free to use this.
  3. When the garlic starts to soften - but before it goes brown - add the cherry tomatoes and cook for a few minutes until they start to break down.
  4. Add the drained mackerel and break it up a bit with a spoon. Cook for a couple of minutes until heated through.
  5. Add the pasta and a good splash of the cooking water.
  6. Toss everything together and cook for a minute or two until the pasta is coated in the sauce. Add more cooking water if it looks dry.
  7. Add the rocket and cook gently until it starts to wilt.
  8. Finish with a good squeeze of lemon juice and some black pepper.
