Chili
Spicy stew made with mince meat. Serve with rice and tortilla chips.

Serves 6
Ingredients
- 1 tbsp. vegetable oil
- 1 diced onion
- 500g minced beef
- 2 tsp salt
- 1 tsp ground black pepper
- 1-2 tbsp. chili powder
- 1 tbsp. ground cumin
- 1/8 tsp ground cinnamon
- 2 tsp paprika
- 1 tsp unsweetened cocoa powder
- ¼ tsp dried oregano
- ¼ tsp ground cayenne
- 3 cloves garlic, minced
- 1 bottle of beer
- 1 can diced tomatoes
- 2 cups of water
- 1 diced bell pepper
- 1 diced jalapeno pepper
- 1 can kidney beans
Method
- Heat the oil in a large pan and cook the onion over a medium heat until soft.
- Add the beef, turn the heat up and fry until browned and most of the water has evaporated.
- Reduce heat to medium-high. Add the garlic, black pepper and spices and cook for a few minutes.
- Pour in the bottle of beer and add the cocoa powder, oregano and tomatoes. Rinse out the can with some cold water and pour that into the pan as well.
- Bring to a boil and add the peppers and beans. Simmer gently for 30mins to 1 hour.
