Cheddar and Leek Orrizotti

Method

  1. Halve the leek lengthways, then halve again into quarters and finely slice.
  2. Heat the butter and olive oil in a medium-large saucepan over a medium heat and gently cook the leek and garlic with a pinch of salt until soft.
  3. Add the orzo to the pan and stir through. Cook while continuing to stir for 2 minutes.
  4. Add the stock and bring to a boil. Simmer gently for about 4 minutes, stirring regularly.
  5. Add the peas and continue to cook for 4 more minutes.
  6. Take off the heat and stir in half of the cheddar.
  7. Allow to stand for 2 minutes.
  8. Serve with the rest of the cheddar.
