Cheddar and Leek Orrizotti
Orzo with cheddar and leeks.

Ingredients
- 1 large leek, washed and trimmed
- 20g unsalted butter
- Splash of olive oil
- 1 large clove of garlic, finely chopped
- 150g orzo pasta
- 500ml chicken or vegetable stock
- 100g petit pois
- 80g cheddar
Method
- Halve the leek lengthways, then halve again into quarters and finely slice.
- Heat the butter and olive oil in a medium-large saucepan over a medium heat and gently cook the leek and garlic with a pinch of salt until soft.
- Add the orzo to the pan and stir through. Cook while continuing to stir for 2 minutes.
- Add the stock and bring to a boil. Simmer gently for about 4 minutes, stirring regularly.
- Add the peas and continue to cook for 4 more minutes.
- Take off the heat and stir in half of the cheddar.
- Allow to stand for 2 minutes.
- Serve with the rest of the cheddar.
