Butter Beans in Paprika Sauce
Butter beans in a smoky paprika sauce.

Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 1 small onion (finely chopped)
- 4 cloves garlic (roughly chopped)
- 1 1/2 tbsp all purpose flour
- 2 tsp sweet smoked Spanish paprika
- 1 tsp dried oregano
- 1/4 tsp crushed red pepper flakes
- 180 ml milk
- 180 ml stock
- 1 can of butter beans
- 2 tbsp grated cheese
- 2 tsp lemon juice
- sea salt & black pepper
- chopped parsley for garnish
Method
- Add the oil and onions to a large saute pan and fry gently over a low heat until soft.
- Add the garlic and continue to cook for a minute or two.
- Add the flour and cook for another minute, stirring constantly.
- Add the paprika, oregano, and red pepper flakes, and cook for another minute.
- Gradually whisk in the milk and stock, and bring to a simmer.
- Add the butter beans and cook for another 5 minutes.
- Stir in the cheese, lemon juice, and season with salt and pepper.
- Serve hot, garnished with chopped parsley.
