Butter Beans in Paprika Sauce

Method

  1. Add the oil and onions to a large saute pan and fry gently over a low heat until soft.
  2. Add the garlic and continue to cook for a minute or two.
  3. Add the flour and cook for another minute, stirring constantly.
  4. Add the paprika, oregano, and red pepper flakes, and cook for another minute.
  5. Gradually whisk in the milk and stock, and bring to a simmer.
  6. Add the butter beans and cook for another 5 minutes.
  7. Stir in the cheese, lemon juice, and season with salt and pepper.
  8. Serve hot, garnished with chopped parsley.
